  1. yes it is soft and crumbly with little bits of grain in it because the blue part is a special kind of mold that give it the special bite that it has.

Yes - this is normal - and the cheaper the blue cheese brand, the more grainy the texture tends to be.  We buy a blue cheese block that costs about $20 a pound and therefore the texture is incredibly creamy and the smell is far less pungent - possibly because they use sheep's milk versus the cheaper version - which uses cows milk.  I hope this helps!  Bon Apetit!
