What is the toughest part about being a sushi chef?

I know it takes time to become skillful and make the sushi quickly and nicely. But what are the most challenging aspects of this job?

  1. Waiting in the Emergency room to get fingers sewn back on.


  2. To me it would be not munching away on my creations!!

  3. You have to make it so quickly and you have to make so much and you have to prepare it just right
