Fast from Paris to Bordeaux (High speed train) and then a slower train to Madrid, or the night train from Paris to Madrid. The French rail site is down right now so I can't give you the time.

But you pass through some of the most beautiful French countryside - the Loire Valley for one.  If you have the time take the train and see the country.
