  1. Honestly, that is not an easy question to answer.  It very much depends on what sector of agriculture you are talking about.  

    Some of it, like fish farming is almost totally done by white American males.  Very few women, and very few migrant or illegal workers.  Unless it's on Tribal land, and then the work is done almost entirely by Native Americans.

    Fruits, nuts and many vegtables...harvested almost entirely by migrant workers, often here in the U.S. illegally.

    Sheep, owned mostly by white American ranchers.  Tended all year in huge flocks by Basque workers, here legally, for a 1-2 year contract.

    Cattle, handled almost entirely by white American men, a few white women, and a small number of hispanic workers, usually here legally.

    Wheat & barley crops, the crop is usually planted by the white male farmers who own the land and equipment.  The irrigation of said crops over the summer is often done by Hispanic workers here legally.  Pesticieds and weed killers are often done by contract, again white American males with airplanes.  The crops are usualy harvested, processed, and transported by white American males, with a small number of Hispanic men.

    Berry crops are often harvested by white american teenagers.  Sometimes a few hispanics.

    Chickens & turkeys are usually raised and transported by white American men, and often processed (butchered) by white women, and other ethnic folks (hispanic, black, asian, ect).

Many 1 acre or so strawberry stands in California are grown, tended , and marketed on the roadsides by South East Asians, Vietnamese, Cambodians,  For the last few years we have had the most unbelievably delicious strawberries at a reasonable cost that you could ever imagine.  Big berries that 8-10 fill a basket that are so sweet, you think you have gone to heaven.  Their fields are so neat and weed free and healthy looking, that they are a comforting sight to behold.
