  1. Haven't you ever had to defrost your refrigerator?  Well, microwaves need to be defrosted periodically, too.

    Seriously, for most uses, your microwave operates at full power.  You have the option of manually selecting a lower power for items that need slower cooking so that they actually cook, not just get super hot and soggy.

    The defrost function is just a preset in which very low power is used to generate just enough heat in the food to thaw it out without cooking it at the same time.  Believe it or not, I have to use if sometimes for ice cream.  Some stores have their freezers set to like -100° and the ice cream is nothing but solid rock.  So I can defrost it for a minute or so, until it's a normal frozen 10°.
