Along time ago, I worked at a fountain and we sold subs on Saturdays.  My boss would tell me to just pack up the lunchmeat that we hadn't sold .  Then, we would be refreeze it  and use it week after week.

Not at my store, but at another one of my owner's franchises the manager will take leftover pizza dough and put it into a big sauce crock over night and then cut it back into dough balls for the next day. It is not necessarily unsanitary, but it is not how the product is supposed to be served.
