what is the best stuff to do when visiting barcelona, spain for a couple days? not just the typical tourist activity

I agree with dino dino. Many of the best places on Barcelona are the touristic ones. I will recommend to take the touristic bus especially if is your first time in the city. The red and blue lines departs from Plaza Catalunya and take you to the principal attractions. Don't miss the works of Gaudi especially La Sagrada Familia, Casa Mila ( La Pedrera ) and Parque Guell. A walking visit to La Rambla and the Barrio Gotico is a most, stop in the Mercado de la Boqueria is a Landmark. If you want something special take the cremayera train (is a weird ride) to Tibidabo amusement historical park in the top of a mountain with the best view of the city. If you like art and history don't miss the Contemporary Art Museum, designed by the American architect Richard Meir, the Miro Institute and the Museo Naval. The Olympic City, the aquarium and the Zoo are other places to visit. If you like the beach take a train to the Costa Brava in the north direction, the beaches are great. Barcelona is the most cosmopolitan city in Spain with excellent night life, food, shopping and fast people moving in all directions.

Welll, a lot of the best stuff is kinda touristy

La Sagrada Familia, Bari Gotic, Las Ramblas,  Picasso Musuem -- I wouldn't skip thoses just because of tourists.

there is loads of stuff to do in Barcelona you can go and see the football stadium, or see the magic fontains at night and the mud built palace/church thing. but do some research if not sure
