  1. Annato seed is also known as achiote. This seed grows on the annato tree. It is used primarily in Mexican and Caribbean cooking to impart a rich yellow/orange color. Annato seed makes a good substitute for saffron's golden coloring, at a fraction of the cost. It does NOT, however, duplicate saffron’s unique flavor!

    Another popular use for annato seeds is to make achiote oil...Cook the seeds in hot oil until their skin dissolves. When the oil turns bright yellow, discard the seeds and use the oil for cooking.

    The seeds can also be ground with garlic and any variety of chili peppers for adobo paste.

    TURMERIC

    Besides flavoring food, to purify the blood and skin conditions remedy is probably the most common use of Turmeric in Ayurveda.

    Turmeric helps to regulate the female reproductive system and purifies the uterus and breast milk, and in men it purifies and builds s***n, which is counterintuitive for a pungent bitter.

    Turmeric reduces fevers, diarrhea, urinary disorders, insanity, poisoning, cough, and lactation problems in general.

    Turmeric is used to treat external ulcers that respond to nothing else. Turmeric decreases Kapha and so is used to remove mucus in the throat, watery discharges like leucorrhea, and any pus in the eyes, ears, or in wounds, etc.

  3. Annatto is a bean mostly used for red coloring.  Turmeric is a root, ground and used for yellow coloring in curries and mustard.  Turmeric is also a great anti-spasmodic.  if you get charlie horses, eat a spoon of mustard.  it helps.
