Question:

What is this name of this japanese sauce??

It looks like a plum color, definitely has a soy base, and was served in a restaurant underneath vegetables and rice. It is vegetarian, by the way. It might not be japanese but the restaurant called it that. Recipes would be great!

  2. Definitely plum sauce.

    PLUM SAUCE

    6 large plums, pitted and peeled

    1/2 cup applesauce

    1/2 cup peanut oil

    1/3 cup light soy sauce

    1/4 cup orange juice

    1/4 cup dry white wine

    3 cloves garlic, minced

    1 1/2-inch c***k ginger, peeled (optional)

    2 tablespoons sugar

    Remove skins from plums by dipping in boiling water for 1 minute or until skin breaks; cool immediately by dipping in ice water or running under cold tap water. Remove pits and discard.

    Cook's Note: This is an optional step but yields a more professional result. (Skins may be left on if you don't mind them).

    Combine all ingredients in a blender; process until smooth. In a heavy bottomed saucepan, bring to a boil. Reduce heat to very low and simmer for about 10 minutes.

    Use sauce for basting or serve as an accompaniment for dipping.

    Plum Sauce

    "Plum jam is cooked with vinegar, brown sugar, garlic and spices to create a sauce that you can serve hot or chilled, with egg rolls, pork or chicken."

    INGREDIENTS:

    3/4 (16 ounce) jar plum jam

    2 tablespoons vinegar

    1 tablespoon brown sugar

    1 tablespoon dried minced

    onion



    1 teaspoon crushed red pepper

    flakes

    1 clove garlic, minced

    1/2 teaspoon ground ginger

    DIRECTIONS:

    1. In a saucepan over medium heat, combine jam, vinegar, brown sugar, dried onion, red pepper, garlic and ginger. Bring to a boil, stirring. Remove from heat.

    CHICKEN AND WALNUTS IN PLUM SAUCE

    1 c. walnut halves

    1 tbsp. beaten egg

    1 tbsp. oil

    1 tsp. cornstarch

    6 chicken thighs, boned, cut into 1/2" pieces

    1/2 c. oil

    1/4 c. hoisin or plum sauce

    1 (1") piece ginger, chopped

    2 tbsp. sugar

    2 tbsp. soy sauce

    1 tsp. sesame oil

    2 green onions, finely chopped

    Pour boiling water over walnuts, let stand 5 minutes. Drain and pat dry. Combine egg with 1 tablespoon oil and cornstarch in small bowl. Add chicken pieces and toss gently to coat. Heat 1/2 cup oil in wok over medium heat until haze forms. Add walnuts and fry until golden, about 45 seconds. Remove with slotted spoon and drain on paper towels. Add chicken to wok and fry until golden brown, 3-4 minutes. Drain. Pour off all but thin film of oil. Return pan to heat. Add plum or hoisin sauce, ginger, sugar, soy, sesame oil and stir until combined. Reduce heat and simmer, stirring constantly until sauce begins to thicken, about 1-2 minutes. Add chicken and walnuts; mix thoroughly with sauce. Transfer to heated platter and garnish with green onion.


  3. if it had a soy flavour to it it would be proably SUMAC...chinesse and japanesse that has aplum looking colour..if it was plum sauce it would be  A tad  sweet...

  4. Tonkatsu sauce?  

    Traditionally, tonkatsu sauce is served with breaded pork or chicken.  But, many local Japanese restaurants in my neck of the woods also serve it with veg & rice.

    I love tonkatsu sauce with everything.  It's a little sweet, definitely tart.  Just a lovely savory sauce!

  7. i think that what you are looking for is hoisin sauce.   no it isn't japanese, it is actually chinese.  but its soy based, plum colored, vegetarian and slightly sweet/spicy.  very delicious! also very commonly used in many chinese dishes, but its made its way over to many asian restaurants.  i have never tried making it at home because it is super cheap and tasty, and readily available at any local asian market, or even  occasionally the grocery store.  but there are recipes out there.

    Recipe Ingredients

    2 tablespoons 30 ml Tomato puree

    2 tablespoons 30 ml Ketchup

    1/3 cup 78 ml Worcestershire sauce

    3 tablespoons 45 ml Dark soy sauce

    1 teaspoon Sugar

    7 tablespoons 105 ml Dashi (bonito stock)

    2 tablespoons 30 ml Cornstarch - dissolved in

    2 tablespoons 30 ml Water

    Recipe Instructions

    Bring tomato puree, ketchup, Worcestershire sauce, soy sauce, sugar and dashi to boil in saucepan over high heat. Add cornstarch mixture, a little at a time, and cook until thickened to the texture of ketchup. Cool before serving.

    But its so much easier to get it from the supermarket

Cant think of other than plum sauce heres a sweet and sour sauce for you, two tablespoon of butter,half cup of chili sauce,half cup of tomato sauce,1 stalk of lemongrass cut thinly,corriander leaves,2 tablespoon of plum sauce a bit of fresh garlic,dice yellow onion,dice young pineaples,sweet corn kernels and salt to taste, a bit of sugar and a cup of fish stock.Fry everything except fillings bring to boil and thicken a bit befor pouring it to a grill fish or fried fish.
