i need some ideas for somthing to cook overnight in the crock pot. any recipes are helpful. i love any kind of meat.

  1. A pork shoulder or butt cut of roast, add some beer, a little water, 1/2 of an onion, two cloves garlic, minced.  Make pulled pork sandwiches the next day.  Meat will be excellent, then add your favorite bbq sauce.

    6 skinless, boneless chicken breast halves

    salt and pepper to taste

    1 teaspoon garlic powder

    1 (10.75 ounce) can condensed cream of chicken soup

    1 (10.75 ounce) can condensed cream of mushroom soup

    1 (11 ounce) can condensed cream of Cheddar cheese soup

    1 (8 ounce) container sour cream

    DIRECTIONS

    Rinse chicken, and pat dry. Sprinkle with salt, pepper and garlic powder. Place in slow cooker.

    In a medium bowl, mix together cream of chicken soup, cream of mushroom soup and cream of Cheddar cheese soup.

    Cook on Low for 6 to 8 hours. Stir in sour cream just before serving

  4. It sounds strange - but it's really good!  My whole family loves when I make this.  I usually use 1-2 lbs of boneless chicken breast if you don't feel like dealing with broilers - it works just fine!

    INGREDIENTS

    2 (2 pound) broiler chickens, quartered or chicken b*****s

    1/2 cup chopped green onion

    1/2 cup soy sauce

    1/4 cup dry white wine

    1/2 cup water

    1/2 cup honey

    ground black pepper to taste

      

    DIRECTIONS

    Place chicken quarters into a slow cooker. Stir together the green onion, soy sauce, white wine, water, honey and pepper in a cup or small bowl. Pour over the chicken. Cover, and cook on high for 4 hours.


  5. I cook my pork shoulders in the crock pot. All you have to add is a few onions, salt, pepper and water. Cook it until you can pull out the bone. You may have to drain off the fat occasionally. When the bone comes out, remove the skin then put it in the oven at 400 until the top is crispy. Leftovers cooked with your favorite bar-b-q sauce are wonderful. It can be a little complicated to move from the pot to the oven but it's worth it!

  6. beef stew or beef roast.  just throw in the meat, a can of beef broth, salt n pepper to taste and I usually quarter some potatoes and onions and add a bag of baby carrots.  cook on low 8-10 hours.

    italian pork chops.  just put chops in crock pot and pour a large bottle of italian dressing over top and cook on low 8-10 hours.

  7. Smoked Pork Roast

    3-4lb pork picnic roast - bone or boneless, does not matter

    2 handfuls of rock salt

    1/2 - 3/4 of a bottle of liquid smoke or hickory flavor

    1 large white onion



    place roast in crock pot, add onions, fill crock with water, add liquid smoke and salt, cover, cook on low for 8 -10 hours

    when done, pork will fall apart.  I like to serve mine over Lime Cilantro rice -

    Lime Cilantro Rice

    1 cup uncooked rice

    2 cups broth from pork

    1 bunch cilantro, diced

    juice from 1-2 limes (depending on your taste)

    1/2 small white onion dices

    combine all above ingredients in sauce pan with lid, bring to boil, reduce heat to med-low, cook until all liquid is absorbed.

    If there is any left over pork, I will shred that for the next day, reheat on the stove with mexican/taco seasoning and make carnitas style burritos/tacos - YUMMM


  8. Italian beef for sandwiches

    10 servings

        * 3 cups beef broth

        * 1 teaspoon salt

        * 1 teaspoon ground black pepper

        * 1 teaspoon dried oregano

        * 1 teaspoon dried basil

        * 1 teaspoon onion salt

        * 1 teaspoon dried parsley

        * 1 teaspoon garlic powder

        * 1 bay leaf

        * 2 (.7 ounce) package dry Italian-style salad dressing mix

        * 1 (5 pound) rump roast

    DIRECTIONS

       1. Combine broth with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.

       2. Place roast in slow cooker, and pour salad dressing mixture over the meat.

       3. Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

    This is my favorite if your having a couple people over.  It is really fantastic!  I would serve it on good toasted sub rolls with provolone cheese on top.  !!don't drain the juice out before you serve!!  * you can also add thinly sliced green bell peppers and/or onions to the crock pot if you like them.*

    Another of my favorites is:

    Chicken tortilla soup

    8 servings

        *   1 pound shredded, cooked chicken

        * 1 (15 ounce) can whole peeled tomatoes, mashed

        * 1 (10 ounce) can enchilada sauce

        * 1 medium onion, chopped

        * 1 (4 ounce) can chopped green chile peppers

        * 2 cloves garlic, minced

        * 2 cups water

        * 1 (14.5 ounce) can chicken broth

        * 1 teaspoon cumin

        * 1 teaspoon chili powder

        * 1 teaspoon salt

        * 1/4 teaspoon black pepper

        * 1 bay leaf

        * 1 (10 ounce) package frozen corn

        * 1 tablespoon chopped cilantro

        * 7 corn tortillas

        * vegetable oil

       1.   Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.

       2. Preheat oven to 400 degrees F (200 degrees C).

       3. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.

       4. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

    top with cheese and fresh squeeze of lime juice :)

  9. Classic Pot Roast:

    1 3-4lb chuck roast

    1 small white onion

    4 large whole carrots

    1 large russet potato

    garlic cloves (as much as you like I usually add a lot)

    2 bay leaves

    1 Tbsp salt (more or less to taste)

    2 tsp black bepper

    few dashes or red pepper flakes

    1 cup Red Wine

    Enough beef broth or beef Bouillon to cover meat

    Roughly chop all veggies and combine all in crock pot

    Corned Beef

    1 2-3 lb pre-brined corned beef brisket

    1-1 1/2 cups brown sugar

    2 tbsp salt

    3 bay leaves

    1 Tbsp black peppercorns

    1 heaping tsp allspice berries

    1 heaping tsp whole cloves

    2 cinnamon sticks

    1/2 large onion roughly chopped

    6 garlic cloves (or more) smashed

    enough water to cover meat.

    *you may have to preheat the water to dissolve all of the sugar and salt into it

I actually have two favorites.  One is sausage, potatoes & cabbage.  Just cut up chunks of frozen sausage, fresh potatoes and then a head of cabbage.  Put the sausage in the bottom, then the potatoes and the cabbage on top.  Sprinkle a little salt into the top and cook on medium for about 8 hours or so.  Stir it up and serve.  Tastes great and it's a very healthy meal.

    The other of my favorites is chicken and rice.  Put in 3-4 boneless chicken b*****s or thighs.  Sprinkle over some salt & pepper or seasoned salt to taste.  Pour over 2 cups of long grain rice.  Add in cut up carrots and onions.  Then pour over 1 can of diced or stewed tomatoes and 1 can of hot water.  Cook on medium heat for about 8 hours.

    Roast beef and veggies!

    Put a nice roast in the crockpot and carrots, Potatoes and onions.

    Put frechonion soup packet and a little water over it and let it cook all night! SO GOOD!

  14. Barbecue pork sandwiches: cook a pork tenderloin on low 5-6 hours. Shred with 2 forks. Return to crock pot. Add enough BBQ sauce to make as moist as you like, and cook another 1-2 hours.

    Au gratin potatoes. Slice potatoes and onions. Add a layer of potatoes, a layer of onion, cubed Velveeta cheese, salt and pepper. Repeat layers until you have the amount you want. Add milk until just covering layers. Cook on low 3-4 hours.
