I like to try different styles. Food is like music. Some is hot, some is cool, some is spicy, some is mild.

Indian for instance. Most US restaurants serve Northern Indian which I think tends to be less spicy but more flavorful. Southern Indian can be very spicy. But there are many states in India, and each has their own cuisine.

Italian is the same. Some is based on Tomato sauces and pasta, other parts on cream sauce, mushroom and risotto. You just can't stop at a cuisine, and you can't categorize a cuisine by how one restaurant does it.

Even good-old American cuisine has wonderful variations. Cajun, NY Deli, California, southwest, tex-mex.
