What is your Zucchini Bread Recipe?

I have a fresh zucchini and want to make some bread with it. I used to make it all the time- but have lost my recipe =( When i've been searching online all I can find are recipes with raisins and extra things added. I just want a SIMPLE-EASY- Zucchini Bread recipe without all the extras! Please post asap- my daughter and I want to get baking it while the little one is taking a nap!

Can anyone share theirs with me?

  1. my wife used to make it all the time she had a recipe from her mom.

    i know u have to shred the zucchini she used flour, cinnamon, vanilla extract, walnuts, eggs and milk ill have to get back to u for anything more. But those were the ingredients


  2. Here's a good one that I just made.

    Soft Zucchini Bread

    3 eggs, beaten

    1 c. cooking oil

    2 c. sugar

    2 c. grated zucchini

    1 t. vanilla

    3 c. flour

    1 t. salt

    3 t. cinnamon

    1/ t. baking powder

    1 t. baking soda

    1 c. chopped nuts, optional

    Combine eggs, oil and sugar until well blended. Stir in zucchini and vanilla. Sift together dry ingredients; stir into zucchini mixture. Stir in chopped nuts. Bake in well greased loaf pan at 350 for 1 hour. Enjoy :)

  4. Mom's Zucchini Bread --

    INGREDIENTS

    3 cups all-purpose flour

    1 teaspoon salt

    1 teaspoon baking soda

    1 teaspoon baking powder

    3 teaspoons ground cinnamon

    3 eggs

    1 cup vegetable oil

    2 1/4 cups white sugar

    3 teaspoons vanilla extract

    2 cups grated zucchini

    1 cup chopped walnuts



    DIRECTIONS

    Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

    Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

    Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

    Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
