It's just a matter of the right amount of water for the right amount of rice grains.  The secret of a good cooked rice is proper "inin" - don't know the exact English word.  The closest I could think of is when you nuke something in the m'wave you don't take it out rightaway but you let it stand for a minute or two.  Same thing in cooking rice; once the boiling is all done you turn off the heat but you just let the pot sit there - without opening the lid - and voila, rice is oh so good and ready after 5 minutes or so.

    In our province, some folks put "dahon" (leaf of something) at the bottom of the pot.  I'm not sure if it's to add flavor but the aroma sure is good.

  4. Substitute Coconut water than using regular water, then when rice is almost cook add pandan leaf =)

  5. I like to "bloom" the rice.

    In your pan, stir the rice in with some oil (enough to cover every grain of rice, but no more) and turn the heat on low. Keep an eye on it, and when it's bloomed (about 20 minutes), it will make a "swoosh" sound in the pan. Then add your salt and whatever else you feel like ~ onions, hot sauce, etc.~ and pour in boiling water (I like the 1 1/2 water to 1 rice ratio). Give your rice a heat-blast for about 30 seconds on high, then turn down to low/simmer. Meanwhile, DON'T stir or turn your rice until all the water is absorbed. Even then, it's nice to let it rest for about 5 minutes before you open the lid.

    1 part rice, 1 part water

    for brown rice,

    1 part rice, 1.5 parts water

    NEVER FAILS..

  11. My favorite is Rice & Peas

    1 cup dried or green red peas

    2 cups rice (white or brown; washed twice)

    2 stalk scallion or chive

    1 onion

    1 clove garlic

    1 pepper

    1/2 dried coconut blend or 1 small sachet of powdered coconut

    1/4 teaspoon salt

    1/4 teaspoon black pepper

    thyme

    Method

    Combine peas with chopped scallion, onion and garlic along with thyme black pepper salt and whole pepper into pressure pot with water and allow to pressure for 20 minutes on medium heat.

    Remove pot and allow to cool before opening.  Check to make sure peas is just cooked.  Peas should be whole however when removed from the water and exposed to air, skin should crack and peal.

    Remove whole pepper from peas. (Take care not to burst pepper into peas)

    Pour peas into regular rice pot

    Add coconut milk to rice liquid making it up to 4 cups of liquid.

    Add washed rice

    Stir with a fork to ensure even distribution of rice with peas

    Allow to cook on low flame (or in oven) for 15 minutes or until water is completely dried.

    Serve
