  2. Hummingbird Cake: It is super rich but fabulous!

    Ingredients:

    3 cups all-purpose flour

    2 cups granulated sugar

    1/2 teaspoon salt

    2 teaspoons baking soda

    1 teaspoon ground cinnamon

    3 eggs, beaten

    1 1/4 cups vegetable oil

    1 1/2 teaspoons vanilla extract

    1 can (8oz) crushed pineapple, well drained

    1 cup chopped pecans

    2 cups chopped firm ripe banana

    .

    Cream Cheese Frosting:

    16 ounces cream cheese, softened

    1 cup butter, room temperature

    2 pounds confectioners' sugar

    2 teaspoons vanilla extract

    1/2 to 1 cup chopped pecans

    Preparation:

    Preheat oven to 350°. Sift flour, sugar, salt, baking soda and cinnamon together into mixing bowl several times. Add eggs and salad oil to the dry ingredients. Stir with a wooden spoon until ingredients are moistened. Stir in vanilla, pineapple and 1 cup pecans. Stir in the bananas. Spoon the batter into 3 well-greased and floured 9-inch round cake pans. Bake for 25 to 30 minutes,or until a wooden pick or cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn onto cooling rack. Cool completely before frosting.

    Cream Cheese Frosting:

    Combine cream cheese and butter; cream until smooth. Add powdered sugar, beating with an electric mixer until light and fluffy. Stir in vanilla.

    Frost the tops of all 3 layers, stack and then frost sides. Sprinkle top evenly with the 1/2 to 1 cup chopped pecans.

  7. Chocolate Malted Layer Cake

    FOR THE CAKE:

    6 ounces best-quality unsweetened chocolate

    2/3 cup canola oil

    2 & 2/3 cups sugar

    1 & 2/3 cups AP flour

    1/3 cup of unsweetened dutch cocoa

    1 teaspoon baking soda

    ¾ teaspoon of kosher salt

    2/3 cup of sour cream

    3 large eggs

    1 & 1/3 cups of hot fresh brewed coffee

    FOR THE CHOCOLATE MALTED FROSTING:

    1 pound best quality milk chocolate

    1 cup heavy cream

    1 cup malted milk powder

    ¼ cup light corn syrup

    8 tablespoons of butter, at room temp.

    8 ounces of malted milk balls

    Position the rack in the center of your oven. Preheat the oven to 350F degrees. Butter and flour two 9x2-inch cake rounds (I used two 5x2-inch pans and halved the recipe). Line each pan with parchment paper.

    1. In the top of a double boiler set over simmering water, melt the chocolate, stirring occasionally. When the chocolate is melted whisk in the oil until smooth. Remove from the heat and keep warm over the water.

    2. In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, flour, cocoa, baking soda, and salt. Mix well.

    3. In a small bowl whisk together the eggs and the sour cream smooth.

    4. Add the egg mixture to the flour and mix until well combined, scrape down the sides of the bowl. Add the melted chocolate and mix well. Add the hot coffee in a steady stream until combined. Scrape the sides of the bowl (the batter is thin).

    5. Divide the batter evenly among the pans. Bake for 35-45 minutes, or until a wooden toothpick comes out clean. Remove from oven and place on wire rack to cool for 25 minutes. Remove cakes from pans and cool completely on the wire racks.

    FROSTING:

    1. Chop the chocolate into small pieces and place in a medium bowl.

    2. In a small saucepan over medium heat bring the heavy cream to a simmer. Whisk in the malted milk powder to combine. Pour over the chocolate. Do not stir. Wait five minutes, and then whisk chocolate until creamy. Stir in the corn syrup. Place a sheet of plastic wrap directly on the chocolate and let cool to room temperature.

    3. When the chocolate is cooled, place it in the bowl of electric mixer fitted with the paddle attachment. Add the butter one tablespoon at a time and mix on low until smooth.

    4. The icing is the filling and frosting for this cake. I chose to cut my cake into four layers and placed a small amount of icing in between each layer. I stored the cake in the fridge.

  10. Funfetti cake. Its simple, and it comes in the boxed mix. But its so good, and everyone loves it. Use 4 egg whites instead of two eggs though.

    just in case you do not know how

      boil cream till it is at a hard boil(running up the side of the pot) take of heat, let it stand for a couple of minutes then add choc stir with spoon ,do not whisk..... then add some more Baily's to the gauche,pour over cake

  22. Preheat oven to 350 degrees F. In a large bowl, combine cake mix, 2/3 cup brandy, ½ cup water, oil, and eggs. Beat with an electric mixer on high speed 2 minutes, scraping down bowl a few times. Stir in 1 cup chocolate chips. Turn into a well-greased 12-cup bundt pan.

    Bake 35 to 45 minutes or until a cake tester inserted in center comes out clean.

    During last 7 minutes of cake baking time, prepare glaze. In a small saucepan, combine butter, remaining 1/3 cup brandy, corn syrup, brandy extract, and 2 tablespoons water. Cook over low heat, stirring occasionally, until butter melts. Stir in remaining ½ cup chocolate chips and powdered sugar. Simmering, stirring, over low heat 5 minutes.

    Immediately upon removal from oven, spoon two thirds of hot glaze over cake. Let cake cool in pan 25 minutes, then invert onto a cake plate. Reheat remaining glaze and spoon over top of cake. Let cool completely. Cake is best if made a day in advance of serving time to allow flavors to mellow.

    For cake

    2 cups plus 2 tablespoons sifted cake flour (not self-rising; sift before measuring)

    1 teaspoon baking powder

    3/4 teaspoon baking soda

    1/2 teaspoon salt

    1 stick unsalted butter, softened

    1 cup sugar

    1 teaspoon pure vanilla extract

    2 large eggs, at room temperature 30 minutes

    1 cup well-shaken buttermilk

    For caramel glaze

    1 cup heavy cream

    1/2 cup packed light brown sugar

    1 tablespoon light corn syrup

    1 teaspoon pure vanilla extract

    Directions  

    Preheat oven to 350°F with rack in middle.

    Butter an 8-inch square cake pan and line with a square of parchment paper, then butter parchment.

    Sift together flour, baking powder, baking soda, and salt.

    Beat butter and sugar in a large bowl with an electric mixer at medium speed until pale and fluffy, then beat in vanilla.

    Add eggs 1 at a time, beating well after each addition.

    At low speed, beat in buttermilk until just combined (mixture may look curdled).

    Add flour mixture in 3 batches, mixing until each addition is just incorporated.

    Spread batter evenly in cake pan, then rap pan on counter several times to eliminate air bubbles.

    Bake until golden and a wooden pick inserted in center of cake comes out clean, 35 to 40 minutes.

    Cool in pan on a rack 10 minutes, then run a knife around edge of pan. Invert onto rack and discard parchment, then cool completely, about 1 hour.

    Make glaze:

    Bring cream, brown sugar, corn syrup, and a pinch of salt to a boil in a 1 1/2-quart heavy saucepan over medium heat, stirring until sugar has dissolved.

    Boil until glaze registers 210 to 212°F on thermometer, 12 to 14 minutes, then stir in vanilla.

    Put rack with cake in a shallow baking pan and pour hot glaze over top of cake, allowing it to run down sides.

    Cool until glaze is set, about 30 minutes.

    Here is the recipe:

    1 chocolate cake mix

    1 can sweetened condensed milk

    1 small container of caramel- liquid

    4- 5 heath bars

    1 large kool whip

    make cake and bake.  Let cool.  Poke w/fork and pour milk and caramel on it.  Sprinkle Heath onto the cake and spread kool whip on and drizzle chocolate syrup on the top.

    BANANA SPLIT CHEESECAKE

    2 cups HONEY MAID Graham Cracker Crumbs

    1/3 cup butter or margarine, melted

    3 (8 ounce) packages PHILADELPHIA Cream Cheese, softened

    3/4 cup sugar

    1 teaspoon vanilla

    3 eggs

    1/2 cup mashed ripe bananas

    1 cup halved strawberries

    1 teaspoon lemon juice

    1 banana, sliced, tossed with lemon juice

    1 (8 ounce) can pineapple chunks, drained

    Preheat oven to 350 degrees F. Mix graham crumbs, butter and 1/4 cup of sugar. Press onto bottom of 13x9-inch baking pan.

    Mix cream cheese, remaining 3/4 cup sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Stir in mashed banana. Pour over crust.

    Bake 30 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Cut into squares. Top with strawberries, sliced banana and pineapple
