  1. penne primavera

    cook penne pasta , in the meantime sautee some fresh veggies in alot of garlic and olive oil, i use spinach, peas, carrots, beans, broccoli, zucchini, cherry tomatoes etc. add a splach of white wine if you have it then toss into cooked pasta


  2. 1-eggplant lasagna, use eggplant slices instead of noodles and omit the hamburger in the sauce.

    #2-couscous salad with purple onion, hand full of  cilantro, olive oil couple tablespoons , and lemon juice! follow the cooking directions on the plain couscous and while still slightly warm add the other ingredients. chill in the fridge.

    #3-roasted baby red potatoes with mushrooms and plum tomatoes, with tons of garlic. combine all ingredients salt and pepper, add a little olive oil to prevent sticking and roast at 400 for about 45 minutes on a flat cookie sheet.

  3. Fettuccine in vodka sauce with meatless meatballs and vegetables

    INGREDIENTS

    4tbsp. extra virgin olice oil

    2 cloves garlic, finely chopped

    2 large shallots, finely chopped

    2 medium carrots, peeled and cut into 1/2 inch pieces

    1/4 lb. fresh asparagus cut into 1 inch pieces

    4 baby artichoke hearts, quartered

    4 large portabella mushrooms, sliced

    1 cup white mushrooms cut in half

    3 lb. ripened tomatoes, peeled and seedless - quartered

    1/4 cup vodka

    1 cup heavy cream

    1 package of meatless meatballs

    1 lb. of fettuccine

    1 tsp. chushed red hot pepper

    INSTRUCTIONS

    In a large pan, heat the olive oil over medium heat. Add the meatless meatballs, garlic, shallot, carrots, asparagus, artichoke, and crushed pepper. Stir well to coat the vegetables with the oil. Cover and cook 10 minutes, stirring occasionally, add the mushrooms, and tomatoes and raise the heat to medium-high. Cover and continue cooking for 20 minutes. Add the vodka and stir well. Sprinkle salt and black pepper for taste. Pour the heavy cream and stir for 2 minutes. Meanwhile, cook and drain the fettuccine according to instructions. Ladle about half of the sauce over the fettuccine and serve. :)

  4. Veggie stirfry.  Just combine in a pan a good mix of your favoirte veggies, add some low sodium soy and maybe some black bean and hot sauces.  Cook over medium heat - eat em when their the consistency you want.  Serve over lo mein noodles.

    in a pie shell add a can of cream of mushroom and garlic soup, some sliced up yellow squash, zuccini squash,pearl onions, add a small can of each: corn, english peas, green beans, new potatoes. (or add a can of vegall) Put top of crust on and sprinkle with cheese.  Bake til brown..

    Here is a vegan stir-fry sauce. Its not labeled vegan, it just IS vegan, and you can get it anywhere (I found it at Wal-Mart):

    Here is the recipe:

    First things first, start some rice in your rice cooker, or in a saucepan according to package directions (1 1/2 cups should be enough for 2). Drain the tofu according to the directions on the package (this takes about 30 minutes). You can use the time in between to start chopping your veggies.

    There are two parts to this recipe, the vegetables & the tofu. In this version the tofu is battered & fried in oil, though the tofu can simply be cubed & added to the stir-fry* without frying, if desired. (See below for non-fried tofu)

    Fried Tofu:

    -1/4 lb extra firm tofu

    -store-bought tempura mix or google a recipe to make your own! (make sure it doesn't contain WHEY!)

    -2cups olive oil

    Cube the tofu to your desired size.

    Combine the tempura batter with water & mix to a cake-batter consistency.

    Plop the tofu cubes into the batter, and make sure they are coated on all sides.

    Retrieve the cubes from the batter, and drop them into pre-heated oil. (You can test whether your oil is heated by dropping a small droplet of batter into the oil first.)

    Let them fry until golden brown. They're attracted to each other in the oil, so make sure you keep them from fusing together.

    After 30-60 seconds (depending on size), retrieve the cubes of tofu and lay them on a paper towel to drain. Set aside.

    Vegetable Stir Fry:

    -1tsp of sesame oil

    -1tbsp of olive oil

    -assorted vegetables (see classification below)

    Hard Veggies:

    -broccoli florets

    -green beans

    -snow peas

    Medium Veggies:

    -bell peppers (multi-color)

    -red onion

    Soft Veggies:

    -mushrooms

    -water chestnuts (canned, rinsed)

    -baby corns (canned, rinsed)

    Heat the oil in a wok or deep frying pan. Add your veggies from hard to soft, about 1 - 2 minutes apart. (Harder veggies take longest to cook, so keep this in mind as you add veggies. You want the hardest ones to get the most time in the wok!) Keep the veggies moving with a wooden spoon at all times. *If you're not frying the tofu separately, it will be the absolute last thing you add AFTER your soft veggies.*

    When the veggies are tender (but not too tender, don't cook out all the nutrients!), add your Kikkoman sauce to taste. (About 3 or 4 tbsp) Toss the veggies in the sauce till all are coated (not more than 30 seconds). Not a good idea to put the fried tofu into the stir-fry, it will lose its crispy exterior. We'll tell you how to add it below.

    Serve over a bed of rice & place your fried tofu on top. Extra stir-fry sauce and/or soy sauce can be added per your preference.

  12. My favorite is a tofu stir-fry.

    Ingredients:

    Extra-firm tofu

    Soy Sauce

    Hoisin Sauce

    Any kind of veggie

    I mix the tofu, soy and hoisin sauce in a bowl and let it sit for a while. Once it's done soaking up those good sauces, I throw it in a pan and let the soy and hoisin sauce make a nice little crust on it. While I am doing that, sometimes I add some vegetables to it so it tastes extra good. Brocceli and carrots work really well, but you can use any kind of veggie you want to.

    It's a really simple, but tasty meal that you can whip up really quick!

  13. My fave veggie meal is sushi. I love the shitake mushroom and vegetables rolls the best. Paired with a good white wine...YUM-o.

    My fave meal that I actually make would have to be black bean tacos. I use black beans, and brown rice. I add chopped onions, cumin to boot, green pepper and either jalapeno or poblano peppers, black olives and banana peppers. Sometimes I'll add tomatoes. I use wheat tortillas, pour on some taco sauce and I'm all set. :-)
