  1. Taytos (Irish crisps, can't get anything like them anywhere else in the world.  Sold for the same price as gold in tiny little grocery shops in Australia and the US to homesick emigrants)

    And Irish (or English) chocolate.  Can't beat it.

  4. My favorite irish food is.... "Colcannon:"!

    t is so goood. My friends grandmothers majes this the best!  

    It is made from mashed potatoes, kale or cabbage, butter, salt, and pepper. It can contain other ingredients such as milk, cream, leeks, onions, chives, garlic, boiled ham or Irish bacon.

  5. I really love Dublin coddle. It is so simple, heartwarming and delicious! It hardly even qualifies as a "recipe"--you just take a medium saucepan (with a lid) and layer the following, in order, to make 2 layers:

    --peeled white or Yukon Gold potatoes, sliced about 1/8-inch thick

    --salt and pepper

    --peeled and quartered yellow onion, sliced about 1/8-inch thick

    --good-quality pork breakfast sausages, sliced about 3/4-inch thick

    --thick-sliced bacon, cut crosswise into strips

    --ending with a layer of potatoes (be sure to salt and pepper the top). Then pour in one can of chicken broth. (If you have homemade chicken broth, so much the better, but canned works fine.)

    Cover the pot tightly and bring it just to a boil on top of the stove. Then reduce the heat to medium-low and let it simmer gently for about 20 minutes. When the potato slices are tender, the dish is done.

    Ladle the coddle into warmed bowls. Pour a little of the cooking liquid over each bowl and sprinkle a good handful of fresh finely-chopped parsley over. Serve with a loaf of brown bread (I always make soda bread to go with this!) and a green salad, and a Smithwick's (or another good Irish beer), and you've got a memorable Irish meal. Slainte!
