Hi there,   in every country and every city  you will come across  different types of  Salami, most places will give you a taste of the one that interests you,  i strongly advice you to try the airdried varieties that have been salt cured not smoked and left to mature,  pick ones that don't have a huge amount of fat in them,  there's no real reason for them to use so much fat other then the fact that it costs less for them to produce, and secondly too much fat tastes a little too greasy to me,  try the ones that have a white fungus on the skin  that is a sign of maturity,  matured salami is like ripe cheese and good red wine, they all go well together with some really crusty Italian bread and black olives,  last but not least i don't really like hot salami  , i hope i have helped you
