Layer the bananas in thin slices on the bottom of the crust. Pour the pudding over the crust and bananas. Then lay wafer cookies over the pudding. Cover the top with whipped cream, then refrigerate.

Lemon Meringue - but it's ages since I had it. And no bakery or cakeshop I've ever been to has been able to get the crust right. When my sister was twelve, it was a favourite thing for her to cook up. She grew up and graduated to ginger sponges. Nowadays she impresses with perfect sponges (she's 52) but I am patiently waiting until one or other of my thirteen-year-old nieces decide to impress with lemon meringue pies. At the moment they're content to make chocolate chip cookies.
