  2. Crowd-Pleasing Chutney Spread

2 (8-ounce) package light cream cheese

3 tablespoons curry powder  (may substitute cumin)

    1 t salt

1 (8 ounce) jar mango-ginger chutney  (any kind of mango chutney will work)

1 bunch green onions, sliced (about 1 cup)

10 slices bacon, cooked and crumbled

1/4 cup finely chopped toasted almonds  (can use dry roasted peanuts if you want)

Combine first 3 ingredients; stir well.  Spread cheese mixture in bottom of 10-inch quiche pan.  Spread chutney over cheese mixture.  Sprinkle with green onion, bacon and almonds.  Serve with assorted crackers.  Yield: 2 1/2 cups

    Larry Vito's Dip

    1 16 ounce sour cream

    1/2 c chopped red onion

3 to 4 seeded, chopped canned jalapeños

1/2  cup chopped parsley 1 T lemon juice

    1/2 t salt

    1/4 t pepper

    Mix and refrigerate 2 hours

These are my two favorite dip recipes. The first because it is different and delicious.  The second because it is so versatile.  If you have leftovers from dipping, you can use it as a spread for baked potatoes or use it to marinate and then broil chicken breast.

  7. feta dip

1 small Onion (about the size of a golf ball) Chopped roughly

4 (dollops) whole sun dried Tomatoes

    2 (dollops) dessertspoons of Capers

150g of Feta Cheese (carton was 200g, the other 50g went in the mashed potatoes later)

½ teaspoon of grated Ginger (from a jar)

½ teaspoon of minced Garlic (from a tube)

3 (no lets give it more of a kick) 4 drops of Tabasco Sauce

5 (dollops) heaped tablespoons of Lite Mayonnaise

A good squeeze of Lemon Juice

Now switch the blender to pulse for a couple of bursts to get the mixture going and then turn onto full speed. Let it blend until the mixture becomes pale pink in colour.

Add a good teaspoon of freshly grated black Pepper and ½ teaspoon of Cayenne Pepper; give another quick burst with the pulse action and it’s ready.

Transfer to a serving dish, cover with cling film and refrigerate until needed.

1 pkg.  (10 oz.) frozen chopped spinach, thawed, drained

    3/4 cup Grated Parmesan Cheese

    3/4 cup  Light Mayonnaise

1/2 cup 2% Milk Shredded Reduced Fat Mozzarella Cheese 1/2 tsp.  garlic powder

PREHEAT oven to 350°F. Mix all ingredients; spoon into 9-inch quiche dish or pie plate.

BAKE 20 min. or until heated through. Serve with TRISCUIT Reduced Fat Crackers and assorted cut-up fresh vegetables

I make this one every New Years Eve..just for me and the kids. It gives us a reason to stay up and watch the ball drop..

    ***Vidalia's Favorite Onion Dip***

    3 cups chopped Vidalia onions

    3 cups shredded Swiss cheese

    2 1/2 cups mayonnaise

    Garlic salt, to taste

Mix all ingredients and pour into greased 1 1/2 quart baking dish. Bake in a preheated 350 degree oven for 35 to 40 minutes until lightly brown. Serve with corn chips.
