To tell you the truth, as a professional Chef I'm pretty bored with all of them.  I've found that I usually get the best meal with excellent service in the smaller, family owned restaurants.  In defense of the franchise places, if you order a particular item in one of their locations, say...on the East Coast it will be exactly the same on the West Coast.
