Fettucine with Roast Rumpkin, Baby Spinach, Fetta and Pine Nuts!!!

- Cut pumpkin into small pieces and toss in a bowl with a few tablespoons of Olive Oil, 1/2 tablespoon chopped Rosemary, 1 clove of Garlic crushed.

- After 10 minutes add Thick sliced red onion (tossed in remaining oil) and bake till both have softened.

- Add Fettucine to boiling water and cook till al dente and drain

- Toss Pumpkin and Onion with Fettucine

- Add fresh baby spinach and toss through while still hot

- Add crumbled Fetta Cheese and Toasted Pine Nuts and stir through

- Serve Hot topped with a little extra Fetta and Pine Nuts
