What is your favorite omelet recipe ?

  1. Fritattas are delicious.  They're basically just an open faced omelet.  This recipe is my personal favorite since it's like a breakfast all in one omelet.

    4 ounces  Bacon- diced

    2 ounces  Onion- diced

    8 ounces  Potato- precooked, diced

    8 each     Eggs- whole

    1.  Cook the bacon in a saute pan until fat is rendered, careful not to crisp the bacon too much.  Add the onions and saute for 1 minute then add the potato and saute until lightly browned.

    2.  Break the eggs into a bowl and whip them.  Season with salt and pepper to your liking.  Add the egg mixture to the saute pan and stir with a spoon.

    3.  Place the pan in a preheated 350 degree farenheit oven and cook until the egg has coagulated.  Remove the pan when ready and serve.

    If you want you can saute some veggies and add those to the mixture before cooking in the oven.  I like to put some diced green pepper in to add flavor.  It's delicious!


  2. prawn omelet.  eggs, mushrooms, bean sprouts, spring onions, prawns.  cook until prawns are pink, serve with some sweet soy sauce, i like to put coriander leaves on top to serve.  YUM!

    Diced onion and tomatoes sauteed, scrambled eggs.

  4. BAKED MUSHROOM OMELETTE  

    2 cans (3 oz. each) chopped, broiled in butter, mushrooms

    6 eggs

    1 tsp. salt

    1/8 tsp. pepper

    Dash of powdered rosemary

    Drain mushrooms, reserving broth from 1 can. Beat eggs slightly with reserved mushroom broth and seasonings. Stir in mushrooms. Pour into well greased, shallow baking dish, about 10 x 6 x 2 inches. Bake in slow 325 degree oven, until omelette is just cooked through, about 35 minutes. Cut into individual servings and serve immediately with wine sauce. Makes 4 servings.


  5. a little milk, LOTS of cheese, a little garlic powder and a little ground pepper.  oh and a pinch of salt!

    I do like veggies in it sometimes, but sometimes they just taste funny.
