What is your favorite recipe for Banh Mi?

A vietnamese sandwich. There are so many recipes on line, what is most authentic?

  1. I have a veggie one when I go to our Asian/Chinatown area, authentic is up to you, a good crusty roll, the meats or veggie if your not into meat, the veg garnishes, carrots, daikon radish, onions and coriander for garnish, mayo and hot sauce. Alot is up to your tastes and selection, Dave C is correct in his analysis.

    Now as for meat, ham is nice, sliced chicken breast like those in the deli, Vietnamese pate is alot like a luncheon meat, they also have liver sausage and a Vietnamese style salami like sausage. If you have Asian grocery's stores or delis they can help you other wise American or other types of meats will have to do, never warm them and they are nice made ahead to allow the flavours to meld and combine.


  2. Hmm.. Well theres only one that I know, but I dont know whats in it.

    Where I live probably 95% of bread shops sell them, and they make them to order right in front of you. Some are better than others. Some are bloody d**n good!  

  3. What you need for an authentic Bahn Mi... at least my opinion as a non-Vietnamese. I'm sure a Vietnamese person would have a different take.

    1.  The French bread - thin crispy crust with a fluffy, soft interior.

    2.  Butter or a light coating of mayo (but butter is preferred) with a few drops of Maggi and a light coating of pate.

    3.  Pickled shredded carrots and daikon, fresh cilantro, shredded cucumbers and freshly sliced jalapeno rings.

    After that... any filling will do.  My preference is the Vietnamese cold cuts - chicken loaf, head cheese and ham which stems from my Vietnamese college classmates who first introduced the sandwich to me back in the 80's.

    However, it's the bread (item 1) and the fresh fillings (item 3), especially the pickled veggies that make the sandwich.
