  1. Mojo de Ajo

    "'Mojo de Ajo' means 'garlic gravy' and this 'gravy' is a real treat. Mix with some pasta or brush it on grilled shrimp. The possibilities are endless." Also good on fish!

    INGREDIENTS

    6 dried chipotle chili pepper

    1 cup extra-virgin olive oil

    1 1/2 cups chopped garlic

    5 tablespoons fresh lime juice

    1/2 teaspoon salt, or to taste

    DIRECTIONS

    Place the chipotles in a bowl and cover with very hot water. Allow to soak for 3 minutes; drain. Remove the stems and seeds from the peppers and discard. Cut the peppers into thin strips.

    Heat the oil in a large skillet over low heat. Cook the garlic in the oil until golden brown, 4 to 5 minutes. Stir in the peppers and the lime juice; simmer 5 minutes; season with the salt. Transfer the mixture to a bowl and allow to cool. Store in an airtight container.


  2. THECHA Recipe (Crushed Chilies): Maharashtra, India

    Ingredients:

    18-20 small green chillies, de-stemmed and washed.

    8-9 cloves garlic peeled

    A handful of peanuts roasted and skins removed

    Rock salt as per taste (or common salt/table salt)

    1 tsp Oil

    Heat a tsp of oil in an iron skillet/tava. Add the green chillies and garlic and roast evenly till you see brown-black spots on them.

    Let it cool.Lightly Pound the roasted green chillies and garlic together with the peanuts and some rock salt. (Optionally you can use table salt).

    Iron Mortar pestle-we call it Khal-batta for pounding the Thecha. A wooden Mortar pestle can also be used.

    Serve with Bhakri or Roti.

    Note: Shelf life of Thecha is about 1 week if refrigerated.

  3. This is an easy one!  Hawaiian Chili Pepper Water.

    Chili Pepper Water

    1 teaspoon salt

    1 teaspoon vinegar

    1 clove garlic, crushed

    6 small hot red chili peppers

    Bring 2 cups water to a boil. Place salt, vinegar, garlic and chilies in bottle. Pour the water into the bottle. Stir with a chopstick and leave for a couple of days to mature.

  4. Eating raw chillis.
