  1. A slice* of the most fudgiest, moist chocolatey cake with ice cream.

    *when I say slice, I mean the whole cake. =]

  3. just betty crocker chocolate cookie mix not made into cookies but into bars with tons of chocolate chips melted and cooled on top.  

  4. CHOCOLATE CAKE

    Ingredients:

    3 cups flour

    2 cups sugar

    pinch salt

    2 teaspoons baking soda

    10 level tablespoons unsweetened cocoa

    2 teaspoons vanilla

    3/4 cup salad oil

    2 tablespoons vinegar

    2 cups cold water

    Preparation:

    Sift dry ingredients into a large mixing bowl. Add remaining ingredients and mix with a large spoon until smooth. Spoon into a greased and floured 13x9x2-inch baking pan. Bake at 350° for 30 minutes. Frost with your favorite frosting.

    SPICE CAKE

    Makes 12 servings.  

    Ingredients:

    1-1/2 cups Sun-Maid Natural Raisins

    1-1/4 cups granulated sugar

    1 cup strong coffee or water

    1 cup grated apple (about 1 medium)

    1/2 cup (1 stick) butter or shortening

    2 cups all-purpose flour

    2 teaspoons baking powder

    1 teaspoon baking soda

    1 teaspoon ground cinnamon

    1 teaspoon ground allspice

    1 teaspoon ground cloves

    1 teaspoon ground nutmeg

    1 cup chopped walnuts or pecans (optional)

    powdered sugar (optional)

    Directions:

    COMBINE raisins, sugar, coffee or water, apple and butter in a medium saucepan. Bring to a simmer over medium heat. Simmer uncovered 10 minutes. (Mixture should measure 2-3/4 to 3 cups total.)

    COOL 10 minutes. (Do not omit this step)

    PREHEAT oven to 350ºF.  Coat a 13x 9-inch baking pan with cooking spray.

    MIX flour, baking powder, baking soda and spices in a small bowl.  Add to raisin mixture in saucepan; stir well to combine.  Add nuts.

    POUR batter into prepared pan. Bake 25 minutes or until toothpick inserted in center comes out clean.

    Serve slightly warm or cool, dusted with powdered sugar if desired.

    EXTRA SPECIAL CAKE            

    Ingredients

    1 c White sugar

    1/2 tps Cloves

    2 c Firmly packed brown sugar

    2 tps Salt

    2 c Water

    4 c Flour

    1 c Shortening

    2 1/2 tps Baking powder

    4 c Seedless raisins

    2 tps Baking soda

    1 tps Cinnamon

    2 c Chopped nuts

    1 ts Nutmeg

    Powdered sugar; to decorate

    Preheat oven to 350(F. Grease a 13 x 9-inch baking pan. In a large saucepan, combine sugars, water, shortening, raisins, spices and salt. Boil together 3 minutes; cool.

    Sift together flour, baking powder and baking soda; add to saucepan, along with nuts. Mix well and pour into prepared pan. Bake for 45 minutes.

    Remove from oven. Let cool for 10 minutes, then turn onto a cake plate.

    When thoroughly cool sprinkle with a little powdered sugar, or mix lemon juice and grated lemon rind into powdered sugar for frosting.

  7. CHOCOLATE PUDDING CAKE  

    1 scant cup semi-sweet chocolate chips

    2/3 cup milk

    1/3 cup sugar

    1 large egg yolk

    2 sticks unsalted butter, at room temperature

    1 teaspoon vanilla extract

    Grind or grate the chocolate chips in a food processor or blender to a fine consistency.

    In a small bowl, whisk together the egg yolk with 2 tablespoons of the sugar until light and lemony colored. Combine the remaining sugar and milk in a small saucepan and heat until tiny bubbles appear along the edges of the pan. Remove from heat, and pour small amount of the hot mixture into the egg, stir and pour the egg and milk mixture back into the pan. Cook over low heat until the mixture begins to thicken or reaches 185 degrees F. Remove from heat and add the hot mixture to the chocolate in the blender or food processor. Add the softened butter and vanilla (do not use cold butter), and process 1 minute or until smooth. Pour into cake pan and freeze overnight. Allow to sit at room temperature 45 minutes before serving.
