  1. In my country there's this dish called "Gado-gado" which means mixing of everything. It contains of boiled/steamed vegetables (green beans, bean sprouts, potato, cabbage, fried tofu, fresh cucumber, fresh lettuce) and you eat it with peanut sauce. It's really good!

    Tacos

    1 Pkg Veggie Ground Round

    1 Pkg Store Bought Taco Seasoning*

    Shredded Lettuce

    Chopped Tomato

    Chopped Onion

    *Fajitas*

    1 Block Extra Firm Tofu cut into strips and marinated

    1 Red Pepper

    1 Yellow Pepper

    1 Orange Pepper

    1 Large Zucchini

    1 Large Spanish Onion

    1 Pkg Store Bought Fajita Mix*

    Soft Tortilla Shells

    Marinade

    1/3 Cup Light Tamari Soy Sauce

    1/3 Cup Teryaki Sauce

    1/4 Cup Maple or Corn Syrup

    *Note: Always check the ingredients to make sure the product is vegan.

      

    Cut tofu into 1/4" thick strips and place in a bowl. In another bowl, whisk all of the marinade ingredients together and pour over the tofu strips. Cover the tofu and put it in the fridge for at least 2 hours (the longer you leave the tofu in the marinade, the more flavour it gets).

    Once the tofu has been marinated, in a large skillet, heat enough olive oil to cover bottom of pan. Add the tofu and briefly brown over medium low heat. Once browned, set aside. In the same skillet, add the onions and saute until translucent. Add all other vegetables and cook until tender. Add the tofu and stir in fajita mix.

    Serve on soft tortillas with lettuce, tomatoes and Tofutti sour cream.



    *Lasagna*

    9 Lasagna Noodles Cooked According to Box Instructions

    1 Pkg Veggie Ground Round

    1 Large Onion Chopped

    1 Jar Pasta Sauce

    1 Tsp Basil

    1 Tsp Oregano

    1 Tsp Thyme

    Fresh Ground Black Pepper

    Olive Oil

    White Sauce

    4 Tbsp Vegan Margarine*

    4 Tbsp Flour

    1 Tsp Mustard Powder

    1/4 Tsp Salt

    3 Cups Soy Milk

    *Note: Some margarines contain animal products such as whey, milk ingredients and animal fat. Please keep this in mind when shopping.

      

    In a pot, sauté onions in olive oil for about 5-6 minutes on medium heat. Crumble veggie ground round into pot and add the pasta sauce. Stir well. Add the herbs and black pepper. Turn the heat to low and simmer for about 30 minutes - 1 hour (the longer you leave it to simmer, the more flavour it will have). Stir often.

    Only make the white sauce when you are ready to put the lasagna together. To make the white sauce, melt the margarine in a sauce pan, add the flour and whisk into a paste. Add soy milk, and continue whisking until the mixture thickens.

    Lightly grease a lasagna pan and place 3 noodles on the bottom. Pour 1/3 of the white sauce over the noodles. Spread half of the meaty sauce on top of the white sauce and noodles. Make one more layer of noodles and use 1/3 of the white sauce and the remaining meaty sauce. Place noodles on the top and pour the remaining white sauce over the lasagna.

    Cover the dish with aluminum foil and bake in a 375° oven for 30 minutes. Let cool for 5-10 minutes before serving.
