What is your favorite way cook eggplant?

  1. One of them is eggplant casserole

    1 eggplant, cubed

    1 lg. onion, chopped

    1 green pepper, chopped

    1/2 lb. okra (may use 10 oz. pkg. sliced frozen)

    3 lg. fresh or 1 #2 can tomatoes

    1 c. cooked rice

    Mix all ingredients with salt and pepper to taste and 1 tablespoon sugar. Cook on top of stove for 30 minutes. Add 1 cup. Put in buttered 8 inch square casserole. Bake at 350 degrees for 15 minutes. Before baking top with grated cheese and bread crumbs.


  2. Slice it, dip it in egg (with a little milk mixed in) and then in wholegrain breadcrumbs (seasoned with italian seasoning if you prefer). Place on a cookie sheet or glass pan and drizzle with olive oil. Bake for 20 mins or (until cooked) on 350. You can melt a slice of cheese on them if you like too - it takes an extra couple of mins.

    Then serve on rolls with tomato, leafy lettuce, red onion slices and mayo & dijon mustard. OMG! Soooo yummy!

    i know it's kind of the "same old thing" but i love comfort food and it is just soooo good.  plus, it's a food you can serve to meat eaters without them complaining, lol.

  10. I like to roast it in the oven for an hour (after poking holes in the skin with a fork), then scoop out the warm flesh and combine it in a blender with lemon, tahini, garlic (roasted and fresh) olive oil, salt, and sometimes a bit of onion or other herbs....and voila!

  11. Dip it in an egg, then in a mix of flour and the tiniest bit of salt. Then fry it. So good!

  12. I love chinese style eggplant! It has a thick salty sauce and it's savory in the mouth. It goes great on top of freshly steamed white rice!
