Question:

What is your favorite way to cook rice and beans?

I eat rice and beans weekly. I still like it but it's kinda getting boring. My typical mixture is a sauteed chopped onion with one tsp lemon juice and one tsp tamari (soy sauce). Then the cooked rice and beans added. Any good ideas?

  1. I love eating black beans and brown rice. I'll cook the rice in a small pot, then the beans in a medium-sized pot. I'll add onions, green peppers, jalapenos, tomatoes, cumin, black pepper, chili powder, etc. After the rice is finished, I add it to the black beans and stir. I can eat it as is or put it in a wheat tortilla and eat it as a beans and rice burrito.


  2. i like to make spanish rice: sautee garlic and onions then add the rice until browned and then put 1 can of tomato sauce, and a little water until the rice is covered. add some cumin and some fresh diced tomatoes... then i just cook the beans and eat them separately or mix them together.

    when i was in italy i lived with a family and they told me how to make traditional italian rice (risotto)... just as if you were cooking normal rice, sautee the garlic and onions... and then add the rice... but then they said to add parsley and mushrooms... and they cooked it in chicken stock/broth instead of water.

Black beans are good, take some dry beans, soak overnight (don't do the quick boil, they take long enough), rinse, dice some onion, about 4 or 5 cloves of garlic, and red pepper.  Add about two tsp of oil to the pot which you plan on cooking the beans, put in the onion and red pepper stir, cook about 1 min, add garlic cook a min or until you smell it, which can be less than a min. add about a tsp of cumin. stir it through, add the beans and stir, then add water to cover the beans and add a teaspoon of dry oregano and about a table spoon of vinegar, you won't taste it. Bring to a boil, let it boil for a min or so, then reduce to a simmer and cover.  Cook about 2 1/2 hours or until tender.  Black beans take a long time.  Red beans are quicker, just don't add cumin.  Black eye peas are great and cook quickly but still about 2 hours.....make some rice and either mix or serve beans on top of rice.  If you use canned beans still cook them with the same ingredients but for about 45 mins to an hour to get flavor in them.  You can cut corn off the cob and add it to the black beans in the last 20 mins or so..it's good.  If you have no fresh garlic use garlic POWDER not garlic salt......

    add some kind of a broth.  veggie, chicken, or beef broth.

  7. Why are you eating so much rice and beans? You don't have to eat only that. There's lots of great alternatives for protein and fibre. Try mixing up your diet more!

  8. 1/2 cup sliced roasted red pepper

    1/2 green bell pepper, thinly sliced

    2 cloves garlic, minced

    2 cans (15 to 16 ounces each) black beans, rinsed and drained

    2 tablespoons white vinegar

    few dashes Tabasco

    3 cups white rice, cooked

    1 tablespoon dried oregano

    salt and pepper, to taste

    Heat oil in a large skillet; sauté onion, red and green peppers and garlic until softened. Add black beans, vinegar and Tabasco. Bring to a boil; reduce heat to low, cover, and simmer for 5 minutes. Stir in cooked rice and oregano; heat through. Taste and adjust seasonings.

    Serve with additional Tabasco.
