i just wondered what i should have for dinner tonight. any ideas?

  1. SPUDS BEANS AND SAUSAGES CANT BEAT IT. LAZAGONE AND CHIPS MY FAVOURITES ANY WAY ENJOY.

  4. Lamb roast is my favorite.

    Lamb chops with asparagus is quick and easy for a middle of the week meal.  

  5. Lasagna,salad and garlic bread ,with grape juice yummy.

  6. My favorite dinner is called That One Salad.  It got named that because I made up the salad and then my family kept begging for me to make That One Salad.  It is so good.  Totally worth buying the ingredients.  And it is huge and hearty.  

    Don't worry about measurements too much.  Eyeball it.

    Ingredients

    1/2 small head romaine lettuce

    2 cups fresh spinach

    1/4 cup lightly toasted unsalted walnuts

    1/2 cup dried cranberries, Craisins

    1-2 ripened tomatoes

    8 ounces <b>white </b>balsamic vinegar

    6 ounces extra virgin olive oil

    garlic salt

    2 loaves of thin pita bread

    1 (4 ounce)  triangle blue cheese (the higher quality the better)

    1 (8 ounce)  chicken b*****s or 2 (4 ounce)  chicken b*****s

    Directions

    1Pre-heat the oven to 400 degrees.

    2Grill/brown the outside of the chicken b*****s (you can do this in a non-stick skillet with a little canola oil or on a grill pan like a George Foreman). After one side is slightly browned, place the chicken in tin-foil and wrap tightly. Bake the chicken in the oven for about 20 minutes depending on thickness. When you remove the chicken from the oven, check for doneness. If the chicken is not cooked all of the way through, put back in the oven for another 10-12 minutes.

    3Meanwhile, brush pita with a small amount of oil and sprinkle with garlic salt. Place loaves into oven on the racks and let back for 5 minutes or until bread is firm and lightly brown. Remove from oven.

    4Chop romaine and spinach, and tomatoes and put in large bowl. Toss with the dried cranberries and all of the toasted walnuts.Add 1/2 of the bleu cheese to the salad, crumbled.

    5Put the white balsamic vinegar into a blender or food processor on medium/high and slowly drizzle in the remainder of the oil. Allow to emulsify for 30 seconds or so.

    6Once the chicken is fully cooked and is cool enough to handle, dice into medium/small pieces and toss into salad.

    7Pour entirety of the dressing over salad and toss/mix together.

    8Serve salad on top of the crispy bread!

    9Serve with extra bleu cheese crumbles on top & cracked black pepper.

  9. I am having Yucca (veggie) with red pickled onions with a herb seasoned chicken breast  with a drizzle of olive oil

    or Breakfast for Supper:  scrambled eggs, biscuits (USA buttermilk biscuits, not sweet UK biscuits), bacon or sausage, pancakes, that sort of thing.

    simple and yet delicious.

  14. I love a good roast - roast pork (with good crackling) and all the trimmings.  How about fried egg and chips, nice and quick and I think it's a real treat as I don't have it very often.

Italian styled Stuff mushrooms and veggie white bean soup.  There is is place in Maryland, USA that has an all you can eat buffet for 35.00 per person and tables large enough to hold up to 16 people per reservation - the best pastas and over-sized stuff mushrooms -- check it out it's called Maggiano's.  Mama Mia!

    Failing that, the past few nights I've made fajitas, beef and veg pie, chilli con carne and good old fashioned egg and soliders.

    Or, if you life in an area like I do, there's no shortages of chippys!

  24. Quick Chicken Parmesan

    4 Boneless Chicken b*****s, pounded flat

    1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

    3 oz. Mozzarella Cheese, grated

    2 cups Italian Bread Crumbs

    2 oz. Parmesan Cheese

    1/2 tsp garlic salt

    1 egg, plus 1 tbs water, slightly beaten

    Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

    Serving Suggestions:

    I serve this with Fettuccini Alfredo and garlic bread.

    Creamy Fettuccini Alfredo

    1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed

    ¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)

    ½ cup margarine (I use I Can’t Believe It’s Not Butter Light)

    ½ cup milk or half and half (I use 1% or 2% low fat)

    8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

    In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.

    Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.


  25. I like a simple bacon and pea pasta with cream and chillies.

  26. Juicey beef steak - medium rare,  baked potato - extra butter and sour cream, and corn on the cob.

  27. I call them aubergine boats. My version is:

    Take 2 or more aubergines and split them into two parts. Then scoop them out. Pan fry some onion and beef + some veg of your choice ( tomatoes, mushrooms etc. etc.). Add them to the onion and the beef as well as the aubergines so that you don't waste them. Fry the ingredients for some time and then fill the aubergine boats with it. Bake for 40-50 mins. Bon apetit! ;-)
