  1. Try Romaine Lettuce.

    Add cubes of Mango.

    A bit of Strawberries.

    And a light Ranch Dressing.

    Very simple.

    So delicious.


  2. Watermelon, feta & basil Salad

    500g watermelon cut into 2cm cubes

    1/2 cup whole almonds roasted

    1 cup fresh basil, shredded

    1 tab rasberry vinegar

    2 tab grape seed oil

    1 teas ground cumin

    200g feta cheese cut into 2 cm cubes

    1 teas white peppercorns ground

    1 teas sea salt flakes

    Gently toss the watermelon, almonds and basil together

    Sprinkle the feta over and toss gently being careful not to break up the ingredients.

    Combine the vinegar, oil, cumin. pepper and salt together then drizzle dressing over the salad.

  11. I know I have said this before but my my favorite salad is:

    sliced tomato

    mozzarella

    roasted peppers

    fresh basil

    salt and pepper to taste

    balsamic vinegar

  12. Light Pasta Salad with Fresh Tuna Steak

    Serves 4

    •  16 oz. Rotini, Twists or Spirals, uncooked

    •  12 oz. fresh tuna steak, cooked

    •  3 tbsp. olive or vegetable oil

    •  4 tbsp. Dijon-style mustard

    •  6 tbsp. rice wine vinegar

    •  Grated rind of 3 limes, finely chopped

    •  6 fresh parsley sprigs, chopped

    •  2 tbsp. low-sodium soy sauce

    •  3 garlic cloves, minced

    •  1 tsp. dried dill weed

    •  1 cup chopped red bell pepper

    •  1 cup green beans, julienne, blanched

    •  2/3 cup red onion, pared, thinly sliced

    Break tuna into small bite-size pieces; reserve. Cook pasta; drain and rinse with cold water. Combine all dressing ingredients; mix well. Toss together pasta, peppers, beans, onions, tuna and dressing. If possible, refrigerate salad overnight to allow flavors to blend. Serve cold.


  13. Party Pasta Salad

    INGREDIENTS:

    1 bottle Bernsteins Sweet Herb Italian Dressing

    2 cups colored rotini pasta (corkscrew)

    1 red or yellow bell pepper, cut in strips (optional)

    1 cup fresh broccoli, cut into bite size

    1/2 cup fresh carrots, cut into bite size

    1/2 cup chopped cucumber, peeled

    1/3 cup fresh mushrooms, sliced

    1/4 cup red onion, chopped

    1/4 cup green onions, sliced

    1/4 cup celery, chopped

    2 oz fresh parmesan cheese, grated

    DIRECTIONS:

    1. Cook pasta according to package directions. Rinse in cold water, and drain.

    2. In a large mixing bowl, add all chopped vegetables, mix well. Pour on 1/2 of the salad dressing, mix well. Add pasta, fold gently until mixed. Add parmesan cheese, stir gently. Chill several hours. Stir gently before serving and add remaining dressing if needed.
