  2. Tho I AM NOT a big Broussel Sprouts guy...nor my friends... ALL LOVED THIS EZ RECIPE!  Take about 1# Sprouts, place in locking baggie, add 3-5 Tbl spoons veg oil, (1) tspn KOSHER SALT, and about 1/2 tspn FRESH ground blk pepper. Shake to coat. Preheat oven to 400. Place sprouts on baking dish and cook 30-45 mins (SHAKING TO ROTATE/TURN EVERY 5-7 mins) Cook until ALMOST BLACK (VERY DARK brown) You won't regret this one!!! I LIKE to add about a tspn & 1/2 minced garlic. Yummy!

    I love all vegetables and salads but with the above dishes if I HAD to choose it would be...

    Meat (Lamb) and brussel sprouts, carrots and roast new potatoes with mint sauce.

    Fish, I love garden peas and mashed potatoes.

    Chicken it would have to be salad, and when I say salad its everything you can think of.

  4. Home made mac & cheese made with my grandmother's recipe and an added crunchy bread crumb topping.

    2 tablespoons extra-virgin olive oil

    Salt and pepper



    1 pound macaroni elbows or cavatapi corkscrew shaped pasta twists or spaghetti

    3 tablespoons butter

    3 tablespoons all-purpose flour

    1/2 teaspoon cayenne pepper

    1 teaspoon paprika

    3 cups whole milk

    1 cup chicken stock

    3 cups yellow sharp Cheddar

    1 tablespoon prepared Dijon mustard

    Place a pot of water on to boil for macaroni.

    To boiling pasta water, add pasta and salt to season the cooking water. Cook until pasta is cooked to al dente.

    While pasta cooks, heat a medium sauce pot over medium heat. Add butter and melt, then add flour, cayenne and paprika and whisk together over heat until roux bubbles then cook a minute more. Whisk in milk and stock and raise heat a little to bring sauce to a quick boil. Simmer sauce to thicken about 5 minutes.

    Drain macaroni or pasta. Add back to pot .  Add cheese to milk sauce and stir to melt it in, about a minute or so. Stir in mustard and season sauce with salt and pepper. Pour sauce over cooked pasta and stir to combine.   Pour out into a baking dish.

    Mix in a small bowl 1/2 cup parmesean cheese and 1/2 cup itilian bread crumbs with a little olive oil to moisten.  Sprinkle over mac & cheese and place under broiler til brown and crispy.   (or bake at 400 for about 15 minutes or until browned and bubbly)

  8. WHITE MEAT I GUESS... although i like fish ... depending on the type it is ... SALMON is the best baked ... mmmmm... yeah i take salmon over anything... you just honestly have to know how to make it ... last but not least ...a nice fresh salad with olive oil !
