What is your secret ingredient when making spaghetti sauce?

Red wine (dry, not sweet) added to the sauce while it simmers.

My husband's dad is 100% Italian and he likes it "fresh".  He sautes a couple cloves of garlic, a diced onion, a couple of ribs of celery also diced. a diced green pepper, but if you use yellow or red it is sweeter, and season it with a little salt and pepper.  The veggies are ready when they are a little golden, but not limp or soft.  Take one can of whole Italian seasoned tomatoes and puree them in the blender.  Add the tomatoes to the sauteed vegetables and bring it to a slow boil.  Simmer for 10 to 15 minutes.  That's it.  He pours this over homemade gnocchi and it is to die for.  We shred a bit of Parmesan cheese over the top and serve it with a nice salad, hearty bread and a glass of wine.  The best!

Dia Fratelli seasoned stewed tomatoes blended with one small white onion, 2 cloves garlic, and fresh basil.  Simmered for 20 min. scooping the foam off (gets rid of bitterness) while it simmers.

Secret ingrediants that aren't so secret:

1.  1 T brown sugar

2.  Chopped fresh basil

3.  1/2 cup good red wine

4.  1/2 cup grated parmesan

5.  Spicy turkey Italian sausage

6.  Tomato sauce and diced tomatos

7.  Kosher salt and fresh ground pepper

8.  1/4 cup very good olive oil (like Bariani)

9.  1/2  tsp red pepper flakes

10.  1/2 medium yellow onion, chopped fine

11.  2 cloves garlic, minced

and lots and lots of love!  :)
