1st--  If you are not sure of what your instructor wants, ASK.  We may be able to give sound advice, but you still want to do what is wanted.

2nd --  When I ask a student to make a journal entry, it generally means to record personal thoughts about the topic.

For instance, I may want a student to respond to a character's actions in a short story or novel, or a more general response to the work as a whole.   Perhaps I'll ask for the student to create a journal based on the events of a story.  

You have many experiences and opinions that can enhance your writing.  By writing them in a "journal" assignment, you are able to clarify your thoughts and articulate them in a more formal fashion.

500 words is about 1 page single-spaced or 2 pages double-spaced using 12 point font.
