What kind of Kayak should I get?

I am wanting to Kayak in slow rivers/creeks and in lakes.

Can one person easily navigate in a two seater? (if I get one and find myself by myself at times)

Are inflatables hard to control?

I would like a "sit on top". Any negatives of those as opposed to "sit inside"?

What length should I get?
