I think it is like stomachs, harts and just various parts of the body that people don't eat. you van always just get all beef hotdogs.

Whatever is leftover, basically.  All beef just means all the leftovers come from cows and aren't a mix of different animal meats.  It's still the leftovers though.

Primarily it's things like lips, tongues, stomachs, ears, small portions of "meat" that aren't really good for other cuts but would be wasted otherwise.

Really, if that kind of thing bothers you, it's best not to think about it.
