  1. I'm only familiar with those related to archaeology, but I would imagine that you would be able to talk to any anthropology department faculty member at any university and get more information about the other subdisciplines.

    A good route to go for archaeology would be to, barring working for a faculty member at a university, to volunteer for the National Park Service.  There are several archaeological agencies within the service, including the Midwest Archeological Center and the Southeast Archeological Center, that are happy to take students out on digs and, if the student lives nearby, have him/her do some lab work.  Contact someone in charge at either place (or another agency, if you happen upon one) to get more information.

It all depends on what area you are interested in.  I focused on physical anthropology with plans of going into forensic anthropology.  I lived in Illinois and so for my first internship I contacted the Illinois State Police Dept and asked about internships at any forensic/crime labs.  I filled out the paper work and got my first internship.  It is all about researching and finding your own internships.  With these types of internships you get to say how long you will be doing it and you get to set the hours and days.  For my other intenships I got them through school.  My professor gave me the contacts but I had to set it all up.  Ask your professors if they know of any volunteer work or internships available, they can be great resources.  Many police or govt dept have internship programs if that is what you are interested in.

    My best advice is to go out and find it.  No one will work as hard as you to find a internship.  Just ask as many people you know who are in the field and get their input.  If they know you are looking, they will keep you in mind if they run across anything.
