Question:

What kind of blanket should I use to cover strawberries that I must transport in a refrigerated truck?

The rest of the produce in the truck must be 37 degrees, but that will be too cold for the strawberries... and the tomatoes too.

  1. Try something insulated, like thermal blankets that maintain temperature. Put the strawberries and tomatoes in first when the truck is not yet  at 37* - whatever temperature is appropriate. Cover them with the thermal blanket to trap the appropriately temperate air underneath it. Put the rest of the produce in and let the truck cool down to 37*. That seems like the most logical way to do it - if you introduce the strawberries after the truck has cooled to 37*, the blanket will still only maintain that temperature.
