You're going to have to pass a quality test which is different in all EU states (the TÜV in Germany or the ITV in Spain).

Most American cars tend to be far from fulfilling the TÜV requirements, which you need to pass if you want to register your vehicle in Germany; you will probably have to spend a lot of money on equipping your car if you want to pass the TÜV. The Spanish ITV tends to be more lenient, and I'm sure you could get the Italian certificate with some behind-the-counter negotiations... it all depends on the country. After that, you need to register your car and I don't think there's any more steps once your car is registered.
