I need champagne to go with olive crusted rack of lamb and asparagus with lemon butter. I don't know much about different flavors and types.

  1. I would do a red wine instead of champagne. A Pinot Noir excellent with Lamb.

  2. Dom Pérignon  expensive but the best for sure.

  3. Champagne doesn't really go with lamb, and it's very expensive to get a good one.  Cheaper ones taste sour, like vinegar.   Try a California red wine:  Mondavi Pinot Noir or Beaujolais.....

  4. It sounds as if you are planning a special dinner.  Normally, a good red wine (the brand will depend on your budget) is eaten with lamb.  But, if you really want to serve champagne, serve it with the dessert, like a individual berry tart. Dessert and champagne go well together.

Go to your store and ask for help in selecting a champagne.  You might also look at sparkling wine (only France has the right to call

champagne, champagne; since it comes from the Champagne region of France, all other countries can't use the name (copyrighted), they must say sparkling wine).
