  1. There's really no such thing as "authentic" nachos.  But we use a lot of quezo fresco (fresh cheese)--it's a soft white cheese and then there's quezo seco (dried cheese), which is a bit harder and can crumble with ease.

    We also use quezo Oaxaca--a semi-hard cheese> similar in taste & texture to string cheese.

  4. Questo blanco,  the Mexican version of mozzerella.  Also Monterey jack and colby are popular as well as a cheddar.

    Great question!  First of all, the Nacho was invented in Mexico (http://cgi.stanford.edu/group/wais/cgi-b... and it makes sense that your nachos were probably made with a Mexican or Mexican Style cheese.  Probably not queso fresco (which is made in the US, and pasteurized by most of the companies that make it), as this is a "fresh cheese", that is generally used for crumbling over dishes, rather than melting.  There are over a dozen types of Authentic Mexican Cheese, so my best guess is that they used a semi-firm or firm Mexican cheese such as Oaxaca (a mozzerela style cheese with slightly nutty undertones),  or Asadero (a melting cheese).  Another cheese that would be suited toward nachos would be chihuahua (also called menonita), which is pale yellow, and can be compared to a very mild cheddar.

    If this restaurant specializes in food from a specific Mexican region, this may help you determine the type of cheese used, as each of these cheeses originates from a specific location in Mexico.

  7. Well, first of all, you aren't going to find a whole lot of "authentic" Mexican restaurants, even here in Texas.

    The cheese they use is called queso blanco or queso fresco (white cheese or fresh cheese). I have found them in most supermarkets in Houston. I doubt you'll find it in Iowa or Tennessee. WARNING: This cheese is NOT pasteurized. It also is not what they use on nachos. If your restaurant is serving nachos, it is not authentic. Nachos were invented in a Texas border town.

    Some restaurants serve a queso mix called queso flameada, which is white cheese like queso fresco or maybe queso oaxaca, but mixed in with chorizo sausage. Definitely not on my diet plan!

  8. queso blanco- you will find near the regular cheese in the grocery store but off to the side, not in with all the kraft cheeses and such.

  9. its called Chihuahua (not the dog)  that is a domestic version of Swiss cheese, also called Emental.

  11. It's a melting cheese. You can buy it at any grocery store, even Wal Mart. They keep it with the tortillas, chorizo and other Hispanic cheeses.

    Heating the cheese in a small pot while stirring. If you want a little spice to it add some chopped jalapeno pepper.
