What kind of cheese do you use to prepare cheesecakes?

I am from Italy and I have no idea of what kind of cheese I should use to prepare a cheesecake. Could you suggest some?

  1. in America, they are typically made with cream cheese, in Europe it is more commonly made with mascapone or ricotta cheese--or a blend of both.

  4. Ricotta Cheesecake (Torta di Ricotta)

    1/2 cup golden raisins

    1/4 cup Grand Marnier or cognac

    32 ounces ricotta cheese

    6 eggs, at room temperature

    1 cup sugar

    1/3 cup all-purpose flour

    1/4 teaspoon salt

    1 teaspoon cinnamon

    1/2 teaspoon nutmeg

    1 teaspoon vanilla extract

    Zest of 1 lemon

    Zest of 1 orange

    1/2 cup pine nuts, lightly toasted

    Grease and flour one 9-inch springform pan. Set aside.

    Place the raisins in a small bowl. Cover with Grand Marnier and allow to macerate. Preheat the oven to 325 degrees.

    Meanwhile, beat the ricotta cheese with an electric beater until fluffy. Add the eggs, one at a time. Then add the sugar, flour, salt, cinnamon, nutmeg, vanilla, and zest. Fold in the raisins and pine nuts.

    Pour batter into the prepared cake pan. Bake until cheesecake is golden, and firm in the middle—about 1 hour and 10 minutes. Serve warm.

    Mascarpone Cheesecake

    Torta di Mascarpone

    7 1/2 x 3-inch cake

    INGREDIENTS

    12 ounces mascarpone cheese at room temperature

    4 eggs, separated

    1 tablespoon vanilla

    3/4 cup sugar

    2 tablespoons King Arthur Unbleached, All-Purpose Flour

    1/2 teaspoon salt

    2 cups light cream

    DIRECTIONS

    Butter and flour a 7 1/2-inch round springform pan. Wrap a sheet of aluminum foil around the outside of the pan and set aside.

    Preheat the oven to 300F.

    In a large bowl, beat the cheese, egg yolks, vanilla, sugar, flour and salt together until very smooth. Slowly beat in the cream.

    With a clean beater and bowl, whip the egg whites into soft peaks and fold them into the cheese mixture with a rubber spatula.

    Pour the mixture into the prepared pan and set the pan in a larger pan. Pour hot water carefully into the larger pan coming halfway up the sides of the springform pan.

    Bake for 1 to 1 1/4 hours or until the cake is lightly browned and set. Cool it in the oven with the door ajar, then at room temperature and lastly in the refrigerator. To serve, carefully release the sides of the pan and place the cheesecake on a serving dish. Slice into wedges and serve as is or with a fruit sauce if desired.

    Variation: Use individual buttered ramekins instead of the springform pan and reduce the baking time to 25 to 30 minutes in a water bath.

  7. The most common type is cream cheese (regular not light as a rule).  However, there are recipes that call for marscapone (an Italian soft spreadable type cheese) or ricotta.  Google cheesecake recipes and you will find hundreds of variations!

  8. Cream Cheese, 4 8oz packages, with a tablespoon of vanilla, 4 eggs and 1 1/2 cups or so of sugar, 1/4 flour, 3/4 milk and a cup sour cream, mix it up and bake it for about an hour, that's a basic recipe. i just use the premade graham cracker crusts.

    Crust

        * 2 cups crushed graham crackers

        * 1/2 cup (1 stick) melted butter

        * 1/4 cup crushed walnuts

    Preheat oven to 350 degrees F. Combine ingredients and press evenly across bottom and sides of a 10-inch springform pan.

    Filling

        * 3 packages (8 ounces each) cream cheese, at room temperature

        * 1-1/2 cups sugar

        * 5 eggs

        * 3 tablespoons lemon juice

    Combine cream cheese and sugar. Add eggs one at a time, beating thoroughly after each one. Beat in the lemon juice. Pour filling over crust, and bake for 45 minutes without opening the oven door. Remove cheesecake and reduce heat to 300 degrees F.

    Topping

        * 1 pint sour cream

        * 1/2 cup sugar

        * 1 teaspoon vanilla extract

    Mix ingredients and spread over cheesecake. Return to oven and bake for 15 minutes longer. Cool on rack for several hours, then refrigerate overnight. Serve plain or topped with fresh fruit.
