What kind of cheese in mexican dish?

I am trying to recreate a tortilla wrap i had at a chiquitos restaurant, it had shredded bbq pork, mexican rice and cheese in it. I am fine with the other ingredients but what kind of cheese would i use? it wasn't extremely cheesy tasting and it was quite waxy... any ideas?

  1. maybe it was Mexican Crumbling cheese... Queso Fresco.  You can find it by the Chorizo (Mexican Sausage) usually in the refrigerated section of your local grocery.  It is white, and is shaped like a fat disc, unlike our cheeses that come in squares or bricks.


  2. Just use the block yellow American cheddar.Freshly grate them.and that's it. you don't get mistake.

  3. A monterey jack or a mexican blend a fresco, a chedder.....Buy your cheese in a block and grate it yourself and it will taste and melt better.

    (I typed fesco instead of fresco)

  4. Kraft has shredded Mexican mix cheese that you can find at any grocery store.  (it's also great on scrambled eggs!)

  5. It's a farmer's cheese. I have found them at Wal-mart super centers.

    it's called Queso Fresco.

    the cheese you're looking for may be this one, or you can try cheddar...that's always good.

There's a mexican cheese I can never remember the name of, it's white and rather waxy textured and very mild tasting.  I often substitute jack for it because I never remember to look for it at stores.  If you go to a store with a good deli selection of cheese they can probably tell you what it is.  Montery jack will give you a similar taste and feel although it seems softer when melted...

  11. I know the kind of cheese you are talking about. It's soo good and it's kind of a white or light yellow color? I think what they use is a goat cheese. You can usually find it at your grocery store and its in a air tight container, the bottom of it is a sort of bowled dish and its pry about 4 or 5 inches across by about 2 and a half high. It will also be white or cream in color. I also think they put a little bit of green and red chilis. I'm sure you can get close to the taste but they seem to have it down perfectly.

    When you cook the cheese cook it VERY slowely, it burns quite easy.

  13. You may be thinking of queso blanco, or chihuaha cheese (a popular cheese that melts well in Mexican cooking).
