Question:

What kind of cookware do restaurants/top chefs use?

i'm looking to buy a new set of pots and pans and want to get what the restaurants use. whenever i watch a cooking show it seems that they all use the same type. obviously stainless steel and with a blue-like handle that doesn't cover the whole handle,just the top half. anyway,what would u guys recommend. hopefully it's not expensive and where would i get them? restaurant supply store?

  1. At our restaurant we use Lagostina cookware. The bottoms are heavy and work well. Try and get cookware with stainless steel handles, so you could put them directly into the oven. You can get good cookware at any kitchen supply store. If you were to buy high end big restaurant cookware, you would pay approx. $350-$500 per piece.

  2. Most restaurants use inexpensive, quality aluminum cookware. They order their stuff from restaurant supply companies.  Just look up "Wholesale Grocery" in your local yellow pages.  These are the stores that sell food and equipment to restaurants.  They are open to the general public and you do not have to be a member to shop there.

    Or, just google "restaurant supply".  I have a complete set of restaurant quality cookware at home.  I don't think I spent over $45 for any of my pans.

    Or, you can go top of the line.  "All-Clad" is the Mercedes Benz of cookware.  They are very expensive and very high quality.  If you buy All-Clad, you'll be able to pass your cookware down to your grandchildren's grandchildren.
