  1. Here are some of my favorites. These are well received.♥

    Pig Out Cake

1 box of yellow cake mix

1 small can (11oz) of mandarin oranges, undrained

    1/2 c. oil

    4- eggs

    Icing:

12-16 oz Cool whip (I use 16 oz)

1 lg. can crushed pineapple, undrained

1 sm. pkg. instant vanilla pudding

Combine cake ingredients and mix well. Bake in rectangle pan at 350 degrees for approximately 30 minutes or until inserted tooth pick comes out clean.

Combine icing ingredients and spread on cooled cake.

Cake does need to be refrigerated until ready to serve.

    * I sometimes add flaked coconut to the icing mixture.

This really looks nice in a glass pyrex dish or a trifle bowl.

    Bake cake according to directions.

    When cake is cooled.

    Layer as follows:

    half the cake - crumbled

half the pudding ( 2 boxes prepared)

3Third layer-Melt the chocolate chips and butter in a small saucepan over low heat, stirring constantly. Cool 10 minutes, then stir in the cream. Carefully spread over the second layer and sprinkle with candies.

4Refrigerate about an hour, until chocolate is set, before cutting.

  3. Rice Pudding; If you want a more traditional rice pudding, omit the amaretto and almond extract, and increase the vanilla extract to 1 tablespoon. Also you'll need an extra 1/4 cup of water.

    Ingredients

    8 cups 2% reduced-fat milk

    1 cup sugar

2 tablespoons butter or stick margarine

    1 1/2 cups uncooked long-grain rice

    1/4 teaspoon salt

    1 large egg

    1/2 cup golden raisins

1/4 cup amaretto (almond-flavored liqueur) or 1/4 cup water and 1/2 teaspoon almond extract

    1 1/2 teaspoons vanilla extract

    1 (8-ounce) carton low-fat sour cream

    Ground cinnamon (optional)

    Preparation

Combine first 3 ingredients in a heavy Dutch oven; bring to a simmer over medium-high heat (about 15 minutes). Stir in rice and salt; reduce heat to medium, and cook 45 minutes or until rice is tender. Stir occasionally, about every 5 to 10 minutes initially, and then as pudding begins to thicken, watch and stir every few minutes to prevent sticking. Do not boil. Place egg in a bowl; gradually add 1 cup hot rice mixture to egg, stirring constantly with a whisk. Return egg mixture to pan; cook 1 minute. Remove from heat. Add raisins, amaretto, vanilla, and sour cream; stir well. Sprinkle with cinnamon, if desired.

    Yield

12 servings (serving size: 3/4 cup)

  4. Jelly

  5. Mini Chocolate Cheesecake Cupcakes. Chocolate, cheesecake, walnuts and dreamy ganache. These adorable little gems have the taste of a huge slab of gourmet chocolate cheesecake packed in each bite.

    And who doesn't like chocolate?

Deceptively simple, they're very very easy & quick... and guaranteed to be a requested-recipe! Have fun!

  6. any type of cake

  7. you could make a cheesecake and cut it into tiny bite size pieces and out a chocolate shaving or something on top of each piece.

  8. I vote for fruity Jello.Make up two or three boxes of Jello and before

it sets, stir in a large or two small cans of a good fruit cocktail. Be

sure you drain the juice from the fruit or the extra liquid will prevent

the Jello from setting properly. There is always room for Jello and

the fruit is good for you.
