  2. One with little snacks even though it sounds odd. Have been to Florence (I) and a place that served dozens of great Mini Sandwiches (any style bread/toppings etc.) worked like crazy. People these days don't wan't to stuff up for lunch but still like a great choice. Think about it!

  3. One that requires minimal investment and allows for a reasonable amount of personal time; very elusive in any food business.  If you find one that fits this criteria, please let me know and we will get rich together teaching others how to do it.

That's a really open-ended question.  If you're just breaking into the food business, have you considered doing catering?  It would require the least amount of capital outlay because you could do the cooking in your own home, and deliver on-site.  You could network friends and relatives for potential customers, and offer to cater their next event (birthdays, parties, get-togethers).

    Whatever you choose to do, a structured business plan will help you and make sure you're on target for your goals.  You can revise it as you go along.  Finding a mentor who is already in a field that you'd like to break into is very helpful too - someone who can offer constructive criticism as you go along.

    Finally, if you start getting clients, be sure to have a written contract in case of dispute.  Take a deposit in advance (many even only accept full payment in advance) that at least covers your material and labour costs.
