  1. A bonafide pig roast....plus also fruits like pineapple, berries, etc., on sticks in a beautiful 'swan-shaped carved watermelon'. Have tiki torches surrounding the area.....& how about some grass skirt dancers w/ bongo type drums? A must are leis for all the guests, w/ fresh beautiful flowers.

    Best wishes & congrats!

  2. It wouldn't be a luau without the pig on a spit.

  3. You could do chicken kabobs with pineapple, pepper & onions, White rice is a must, BBQ Salmon, macaroni salad and hawaian rolls.

  4. I would go with lots of salads.  They are usually pretty cheap to make.  A grilled fruit salad would be something different and luau-esque.  You can use seasonal fruit, some lemon juice and toss it all together.   I like grilled pinapple, bananas, and strawberries but you can be creative.

  5. Pigs are expensive!  So, I'd stick with a couple of pork butt's seasoned with kosher salt and pepper and slow cooked in an oven, on a grill, or even in a crock pot.  Cook until tender and easily pulled apart with a fork.  Here's some other ideas:

    1.  Lomi Lomi Salmon:  lox cut salmon mixed with diced tomatos, onions, parsley and lemon juice.

    2.  Fresh fruit kabobs:  pineapple, kiwi, strawberries, melon and a marshmallow cream dipping sauce.

    3.  Barbecued chicken:  marinate in Italian dressing overnight, drain and barbecue.  Baste with teriyaki sauce.

    4.  Potato salad:  very big in Hawaiian dining

    5.  Green salad with a ginger based dressing

    6.  Hawaiian style rolls

    7.  Dessert:  lemon bars, mango bars, pineapple upside down cake, brownie bites, coconut cake bites
