    Lamb is big in La meseta, as are game foods, like quail, and partridge, and any place in Spain usually has the delicacy cured hams.

    Most of Spanish cooking (old school) is fairly homey.  Good, solid foods, with simple sauces, and fairly simply cooked.  I love it all!
