What kind of government regulations are hotels and restaurants subject to?

I'm writing a paper in which I have to explain what kind of government regulations a company or franchise is subject to. The company I chose happens to be a hotel. I just need to know what government agencies have a part in regulating this business.

  1. On the Federal level, hotels are considered public spaces and hence are subject to Federal anti-discrimination laws.  

    Other than that, hotels are largely regulated by the state government, with optional, relitively minor, "add on" regulation by the local government.

    For instance, hotels in Florida are generally regulated by the Department of Business and Professional Regulation.
