  1. I am a baker. I start work at 5pm bake 100lbs of product (donuts, cinnamon rolls, eclairs, fritters, etc) on top various other things. This involves mixing dough, rollingdough, cutting dough, frying, baking, frosting, filling, decorating, etc. I get finished at 6:30am the next morning. I have a high school or college student or two open the store around 5am and they work until 10am until I get back to close the store do paper work and start all over again. It is a full days worth of work and sometimes I go 2 or 3 days with 5-6 hours of sleep total if something goes wrong. If you build your business where you can hire a lot of employees that are dependable (which is hard to find) then you will not have as much work to do.

  2. I work at Panera bread and bakers work 10pm6 or 7am.   Usually they have a helper for a few hours during the night.
