I am tired of the traditional mexican type of dishes. What are some clever dishes you've cooked up with Chili?

  1. You can make Cincinnati Chili which is served on pasta. Here is my favorite recipe:

    1 tablespoon vegetable oil

    1/2 cup chopped onion

    2 pounds ground beef

    1/4 cup chili powder

    1 teaspoon ground cinnamon

    1 teaspoon ground cumin

    1/4 teaspoon ground allspice

    1/4 teaspoon ground cloves

    1 bay leaf

    1/2 (1 ounce) square unsweetened chocolate

    2 (10.5 ounce) cans beef broth

    1 (15 ounce) can tomato sauce

    2 tablespoons cider vinegar

    1/4 teaspoon ground cayenne pepper

    1/4 cup shredded Cheddar cheese

    Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until tender, about 6 minutes.

    Add beef, in batches if necessary, and cook, breaking up with a wooden spoon, until browned.

    Add chili powder, cinnamon, cumin, allspice, cloves, bay leaf, chocolate, beef broth, tomato sauce, cider vinegar, and red pepper. Stir to mix well. Bring to a boil. Reduce heat to low; cover and simmer 1 1/2 hours, stirring occasionally.

    It is the best if you now refrigerate overnight.

    Remove the bay leaf. Reheat gently over medium heat. Serve over hot, drained spaghetti. Top with shredded cheddar cheese and onion.

  4. You can mix it with cooked pasta  OR

    Make Shepherd's Pie:

    Place the chili in the bottom of an oven-proof baking dish, add a layer of peas & carrots (or a veggie of your choice), top with mashed potatoes, add some dabs of butter on top of the mashed potatoes and bake @ 350 degrees for 25-30 minutes or until the mashed potatoes start to get lightly browned in spots.  You can also add a layer of shredded cheddar or jack cheese between the chili and the veggies.

    Heat up the chili and serve inside of large baked potatoes that you split open with a fork.  You can also top it with your choice(s) of shredded cheese, chopped green onions, bacon bits, sour cream, guacamole, etc... be creative.....

  5. Chili mac.  Heat the chili as you cook elbow macaroni.  Combine the drained macaroni with the chili in the pan, and heat the two.  Add American or cheddar cheese and allow the cheese to melt.

    Chili dogs or chili burgers.  Cook the pattie or frank, put on a bun, and add heated chili over the top.  Cheese is optional.

    decades age I rolled chili in soft and corn tortillas some times I fried them  too..  

  7. I have been known to make chili macaroni.

  8. Soup.

    Takes two cups of chili and dilute it with two cans of beef broth.  Add 1/4 cup of corn and throw in a handful or chopped green pepper.

    I top it with corn chips sour cream and grated cheddar.

    I like to keep that in my freezer for times when I don't want to cook.

    Use corn (masa) flour in a standard biscuit recipe.

    When the chili is done, spoon the batter on top until covered and toss it in a 350 oven until golden brown on top.

  10. FRITO CHILI PIE



    2 1/2 c. Fritos

    1 lg. onion, chopped

    1 c. grated American cheese

    15 oz. can chili, heated

    Place 1 1/2 cups Fritos in a baking dish or pie pan. Arrange chopped onions and half of cheese over Fritos. Pour heated chili over onions and cheese. Top with remaining Fritos and cheese. Bake at 350 degrees for 10 minutes.

    Layer chili, chips,cheese,chili,chips cheese. Bake 1/2 hour 350degrees. take out rest for 5 min. top with sour cream serve immediately YUMMY

    plain white rice - Bottom layer -- Bake for 20 min or so

    Corn dogs (sticks removed) laid in the bottom of a 13/9 baking dish, chili over the top of that, sour cream, shredded cheese, bake for the amount of time for the corn dogs to be fully cooked. Its kinda of like chili cheese corn dogs!

  15. ARTICHOKE CHILI DIP

    1 can (14-oz) artichoke hearts drained an, d chopped

    1 cup grated parmesan cheese

    1 can (4-oz) green chili peppers chopped

    1 cup mayonnaise

    Tortilla chips for dipping

    In a small mixing bowl combine artichokes, cheese, peppers and

    mayonnaise. Transfer mixture to an 8 inch round baking dish. Bake,

    uncovered, in a 350 degree oven for 20 minutes. Serve warm with

    tortilla chips.

    BEEFY CHILI MAC

    1 lb beef cubed steaks

    1 tbsp vegetable oil

    1 medium onion, coarsely chopped

    29 oz canned diced tomatoes (chili-season, ed) undrain

    1 1/2 cup uncooked rotini (spiral pasta)

    1/2 cup water

    1/2 cup shredded cheddar cheese

    Cut beef steaks lengthwise into 1" wide strips and then crosswise

    into 1" pieces. Heat oil in Dutch oven over medium-high heat until

    hot. Add beef and onion; cook and stir 3 minutes.

    Stir tomatoes, pasta and water into beef. Bring to a boil; reduce

    heat to low. Cover tightly and simmer 20 minutes or until pasta is

    tender. Sprinkle with cheese before serving.

    CHILI TOPPED POTATOES

    1 1/2 lb ground beef

    4 medium baking potatoes (8 oz each)

    1 tbsp chili powder

    15 oz canned hot chili beans

    1 1/2 cup shredded cheddar cheese (mild), div, ided

    1/4 cup sliced green onions

    Pierce potatoes with fork. Microwave on HIGH 11 to 13 minutes or

    until tender, rotating 1/4 turn after 6 minutes. Let stand 5 minutes.

    Meanwhile in large skillet, brown ground beef over medium-high

    heat 6 o 8 minutes or until beef is no longer pink, breaking up into

    3/4" pieces. Pour off drippings; stir in chili powder and 1/2

    teaspoon salt. Add beans and 1 cup cheese; cook and stir until heated

    through.

    Cut a slit lengthwise in potatoes; fluff pulp with fork. Season

    potatoes with salt and pepper, if desired. Spoon equal amounts of

    beef mixture over each potato. Top with remaining cheese and green

    onions.

    AVOCADIO CHILI PASTA

    8 oz creamette rotini, uncooked

    1 large avocado, peeled; pitted; and

    1 diced

    1 tbsp lemon juice

    15 oz can hormel chile no beans

    1 cup tomato, seeded; diced (about

    1 1 medium)

    1/2 cup green onions, sliced

    1 clove garlic, crushed

    1/4 cup fresh cilantro, minced

    Cook rotini according to package directions; drain and keep warm.

    Combine avocado and lemon juice in a small bowl; toss well, and set

    aside.

    Combine chili and next 4 ingredients in a small saucepan; cook over

    medium heat until thoroughly heated, stirring occasionally. Stir in

    avocado; cook 2 minutes. Serve over rotini.

    Southwestern White Chili

    1 tablespoon olive oil

    1/2 pound boneless, skinless chicken breast, cut into small cubes

    1/4 cup chopped onion

    1 cup chicken broth

    1 (4 ounce) can chopped green chiles

    1 (19 ounce) can white kidney beans (cannelloni), undrained

    2 green onions, sliced

    1 teaspoon garlic powder

    1 teaspoon ground cumin

    1/2 teaspoon oregano

    1/2 teaspoon cilantro (optional)

    1/8 teaspoon ground red pepper

    Monterey jack cheese (optional)

    Heat oil in large skillet over medium-high heat. Add chicken and onions; cook 4 to 5 minutes.

    Stir in broth, chiles and spices. Simmer 15 minutes.

    Stir in beans; simmer 5 minutes. Top with green onions and Monterey jack cheese, if you desire.
